This Cowboy Cookies recipe makes delicious oatmeal,
chocolate chip and nut cookies just like grandma and mom
use to make when we were kids. It is an easy
recipe for cookies that makes great cookies. I can
smell the chocolate chip cookies baking in the oven already!
Cowboy Cookies Recipe

For this recipe, you will need a large, flat
metal cookie tray and the ingredients listed at
the right. Use
a non-stick baking tray if you have one available or use a
Silpat liner to prevent sticking or burning
against the metal. Preheat oven to 350°
F (175° C). Spray the cookie tray with
non-stick cooking spray.
Make the flour mixture
by mixing together the flour, baking soda, salt, and
baking powder. Set aside.

In a large mixing bowl,
beat the granular sugar, brown sugar, vegetable
shortening, vanilla extract and eggs together until
light and fluffy. Mix in the flour
mixture.
Stir in the old
fashioned rolled oats, chocolate chips and chopped nuts.
Drop spoonfuls onto
cookie tray.

Bake in batches for 10
to 12 minutes until golden brown. Remove from oven and
allow to cool on wire rack.

2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 cup granular sugar
1 cup vegetable shortening
1 cup brown sugar
2 large eggs
1 tsp vanilla extract
2-1/2 cups old fashioned rolled oats
1 pkg (6 oz) chocolate chips
1 cup chopped nuts (best with pecans)
