For this cookie recipe, you will need a large, flat
metal cookie tray and the ingredients listed at
the right. Use
a non-stick baking tray if you have one available or use a
Silpat liner to prevent sticking or burning
against the metal.
Preheat oven to 375°
F. Spray the cookie tray with
non-stick cooking spray.
In a large mixing bowl,
blend the sugar, peanut butter and butter until
smooth.
Add egg and
mix until fluffy.
Add the flour,
baking soda, baking powder, and salt. Mix
well.
Form 1/2
tablespoon balls and place them on the cookie
sheet.
Take a fork and
mash down to 1/2 inch thick.
Bake in batches for 10-12
minutes until lightly brown. Remove from oven and
allow to cool on wire rack.
Makes
approximately 8 dozen cookies.
